My love affair with whiskey started after reading a book called Truths about Whisky, published in 1879. It explained how the liberties in Dublin (where I was born) were the epicentre of global whiskey.


Dublin whiskey was the ‘gold standard’ spirit… the champagne of sparkling wine so to speak, at that time.


Yet after reading Truths About Whisky, I was curious to learn more. I did some digging and I realized that Irish whiskey wasn’t perceived as such a luxury item any more. In every high-end restaurant around the world, you’d be lucky to see 1 or 2 Irish whiskies on a menu with 16-45 Scottish and at least 8 American whiskies.
